QUICK AND EASY TUNA SALAD

Lately I have been really focused on eating right, but also eating the right amounts for my body to help it flourish so I can achieve my body goals for 2019. For me this year its all about building muscle, which means I need to be eating a lot and making sure I eat enough protein; more than what I am used to - so maybe 3-4 meals a day. To help myself adjust to eating more I like to chuck a healthy salad into my day.

If you’re a busy person like I am I like easy to prepare or as I like to call it ‘throw it together’ meals with whatever I have lying around my fridge. Here’s my latest throw it together meal.

 

INGREDIENTS

  • HANDFUL OF ROCKET

  • 2 HANDFULS OF SPINACH

  • 2 BOILED EGGS

  • SUNDRIED TOMATO

  • TUNA (I use Sirena, Italian Style)

 

METHOD

  1. Boil two eggs (I have a egg boiling machine which is an absolute god send as I can bulk boil eggs and walk away while they’re cooking and wait until the machine goes off)

  2. Mix up rocket and spinach mixes into bowl, add in sundried tomatoes and tuna of your choice

  3. Peel shells off eggs and add to salad - enjoy!!
